If you’re just craving pizza, an easy way to trim a few calories from the recipe is to switch out a handful of the ingredients, and downsize a large-scale slice into a bite-sized treat.

This trifecta of tastiness is as easy as wrapping up a cheese stick with some pepperoni in an egg roll and deep-frying it. You could bake these stuffed Pizza Sticks too, but why would you want to do that? Better to heat up a vat of oil. If that seems like a lot of work, trust me: It’s worth it.

Use low-fat mozzarella string cheese, pepperoni, and egg roll wrappers for a crispy fried treat you can make at home, and eat on the go — just like a slice but smaller!

These pizza sticks make a great appetizer to serve to guests or to prepare for a party. This recipe consists of mozzarella cheese sticks and sliced pepperoni wrapped in egg roll wrappers. The prepared pizza sticks are then cooked in a deep-fryer until golden brown. These can be prepared in advance and then frozen and cooked at a later time. You can also increase the ingredients if you want to prepare large batches. These go great dipped in pizza sauce and you can use whatever your favorite brand of pizza sauce is or even make your own.

Ingredients
  

  • 12 egg roll wrappers
  • 12 pieces string cheese
  • 36 slices pepperoni
  • Marinara sauce for dipping
  • Oil for frying

Instructions
 

  • Lay an egg roll wrapper out flat, then lay three pieces of pepperoni down the center on the diagonal.
  • Lay a mozzarella stick on top of the pepperoni.
  • Now, fold the corners of the egg wrapper down over the cheese.
  • Next, fold one of the two larger corners down over the cheese and start rolling until you run out of wrapper.
  • Use a little bit of water to "glue" the edges shut. Repeat these steps for all 12 mozzarella sticks.
  • Next, heat up oil in a deep frying pan, then transfer wrapped mozzarella sticks.
  • Fry wrapped cheese for 1 minute on each side or until golden brown.
  • Serve hot, with marinara sauce for dipping. Enjoy!

Scallops are one of those things that are SO simple to cook, and yet, so simple to screw up. I have to admit I botched a few batches myself back in the day (it was like eating rubber!), but with their hefty price tag, I quickly made it my mission to learn the key to a perfectly seared scallop. And by perfect, I mean a scallop with a flavorful crust and an interior so tender it basically melts in your mouth. That’s perfection!The good thing about this whole post is that perfectly seared scallops are easy as 1-2-3. I totally was going to type “easy as pie”, but ya know, these little guys are so much easier than that whole situation.

The first thing you want to do is make sure you have good quality scallops. I know they’re pricey, but I think that if you’re going to put in the effort – especially with seafood – freshness and quality are always key. So get the best you can.

Once you’ve selected your scallops, all you need to do is pat them dry, sprinkle them well with salt and pepper (freshly grated is always the best!), and toss them in a buttered hot skillet.

Ingredients
  

  • 1 pound sea scallops patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • Freshly ground black pepper
  • Freshly ground sea salt
  • Lemon for squeezing optional

Instructions
 

  • Remove tiny side muscle from the scallops if they have them, then rinse with cold water and pat dry with a paper towel.
  • Add the butter and oil to a large saute pan over high heat.
  • Generously salt and pepper the scallops. Once the butter/oil combo begins to smoke, gently add the scallops, making sure they are not touching. Sear scallops for 1 1/2 minutes on each side - not touching them at all while they're searing. The scallops should have a nice golden crust on each side and be translucent in the center. Serve right away!!!

The Big Game is quickly approaching and I have been pulling together some recipes for my game day party menu and these blackened shrimp avocado cucumber bites are high on my list! Not only are they super tasty but they are also nice, light and healthy and they only take a few minutes to make!

You simply “blacken” the shrimp by seasoning them with creole seasoning and searing them in a cast iron pan over high heat so that they cook in no time, getting a nice light blackened sear on the edges while still being succulent on the inside! The spicy shrimp is then served on top of crispy and cool cucumber slices along with a creamy avocado sauce that is the perfect combo of flavours, textures and temperature!

Ingredients
  

For the shrimp and cucumber bites:

  • 1 pound shrimp peeled and deviened
  • 1 tablespoon creole seasoning
  • 1 cucumber sliced
  • 1 tablespoon oil
  • 1/4 cup remoulade sauce optional

For the avocado sauce:

  • 1 avocado mashed
  • 1 tablespoon lemon juice
  • 2 tablespoons cilantro and/or parsley chopped
  • 1 green onion thinly sliced or chopped
  • salt and cayenne to taste

Instructions
 

For the shrimp and cucumber bites:

  • Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
  • Assemble the bites with cucumber slices, topped with avocado sauce, shrimp and remoulade sauce.

For the avocado sauce:

  • Mix everything and enjoy!

Notes

Option: Use your favourite guacamole instead of this avocado sauce.

Ingredients
  

  • 12 mini flour tortillas warmed
  • 1 1/2 pounds skirt steak cut into 1/2-inch pieces
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons reduced sodium soy sauce
  • 3 cloves garlic minced
  • 2 tablespoons canola oil divided
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1/2 cup chopped fresh cilantro leaves
  • 1 teaspoon dried oregano
  • 1 lime cut into wedges
  • 3/4 cup diced red onion

Instructions
 

  • In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano.
  • In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally.
  • Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness.
  • Serve steak in tortillas, topped with onion, cilantro and lime.

Ingredients
  

  • 9 oz creamed spinach frozen or freshly made
  • 24 chilled wonton wrappers
  • 2 oz softened cream cheese cut into 6-8 cubes
  • 3-6 oz marinated artichoke hearts* approx. 1/4-1/2 cup chopped
  • 1/2 cup grated mozzarella cheese
  • 1/4-1/2 tsp crushed red pepper flakes
  • 1/2 tsp garlic powder
  • 1/2 cup freshly grated parmesan cheese
  • 1/8 tsp black pepper
  • spray oil avocado, olive, etc…
  • 1/8 tsp salt or to taste

Instructions
 

  • Pre-heat oven to 365 degrees F.
  • Next grab your creamed spinach and warm using package instructions. Drain your artichokes and chop into small pieces. Combine with spinach.
  • Gently place won-ton squares in a mini-muffin tray spritzed with spray oil. For extra crunch you can also lightly spray the won-ton wrappers themselves with a little oil.
  • Bake for 5 minutes to lightly crisp.
  • Combine creamed spinach with your trio of cheeses and season with garlic powder, red pepper flakes, salt, and pepper.
  • Spoon spinach mixture into lightly baked won-ton cups and bake for an additional 5 minutes or until the cheese is melted and the edges of your won-ton cups are toasty and golden brown with a hot, melty spinach dip center.
  • Dive in while they’re hot!

Notes

* For the artichokes, adjust amount based on preference. I like using 1/2 cup so there’s lots of marinated artichoke in every bite of spinach dip. If. you prefer less or a more mild flavor, try 1/4 cup. Alternatively, these can 100% be made without artichoke hearts if you prefer – add a little extra garlic or some sautéed shallots/onion in their place.
No creamed spinach? No problem! Simply thaw/heat a 9 oz package of frozen chopped spinach and combine it with 4 oz softened cream cheese or a bit extra based on your ideal spinach-to-cheese ratio.
Fresh minced garlic may be used in place of garlic powder if needed. Simply sauté it briefly in a little oil/butter to soften and release the fragrant aromatics of the garlic.

Tasty Southern Crab Beignets

 

Two beloved New Orleans foods come together in one knockout party bite. It’s hard to find the words to describe how delicious this recipe is. Crunchy on the outside with a luxuriously crab meat-filled inside. The flavor and texture is simply out of this world.

HOW TO MAKE SOUTHERN CRAB BEIGNETS AT HOME
We just can’t rave about these Southern Crab Beignets enough! And they are really very easy to make!

If you really want to impress, go with lump crab meat. It’ll cost you a bit more, but it delivers each crab beignet with full-on crab taste. All the other ingredients compliment the crab beautifully, and give just enough Cajun heat to make it worthwhile.

What we love about these crab beignets is that they stay so nice and tender on the inside. All the flavors meld together so nicely, and as we said, its all about the crab. Oh, yes! By the way, if you think these look good, you’d probably also love Bacon Parmesan Cheese Puffs!

And just a minute or two in some hot oil produces the most amazingly crisp and crunchy exterior, and yet still the most tender, succulent crab mixture on the inside. One word of warning, these do not last long at all when placed on a table in front of hungry guests. They are usually the first to go.

And, did we mention how creamy, crabby and ridiculously delicious the inside is? Oh we did? Well, we want to make sure you believed us. I mean, just look these babies and tell us you are not getting yourself worked into a frenzy ready to whip up a batch as soon as humanly possible?!

These Southern Crab Beignets are supremely delicious. Try and find blue crab meat from your fish mongor or seafood market. If you can't find blue crab, any good quality crab meat will do. Amazing!

Ingredients
  

  • 2 large eggs
  • 1 lb blue crab meat or any good-quality crab meat
  • 2 tbsp Creole mustard or coarse grain mustard
  • 1 cup mayonnaise
  • 1/4 cup thinly sliced scallions
  • 2 tsp fresh lemon juice
  • 1/4 cup finely diced red onion
  • 1/2 tsp black pepper
  • 1 1/2 tsp Kosher salt
  • 1 cup Panko bread crumbs
  • Pinch cayenne pepper
  • 1 cup White Remoulade Sauce
  • Canola oil for frying

Instructions
 

  • Put the crabmeat in a bowl and use your hands to pick the meat free of any shells. Do this at least twice.
  • In a medium bow, whisk the eggs until they're light and foamy and then whisk in the mayonnaise and mustard.
  • Use a wooden spoon to stir in the lemon juice, scallions, red onion, salt, black pepper, and cayenne.
  • Fold in the Panko and then gently fold in the crabmeat so it doesn't get broken up from too much mixing. The batter should be just thick enough to barely hold together when frying. Refrigerate for at least 1 hour to help it firm up further.
  • In a large, deep skillet or pot, heat 2 inces of canola oil to 350 F.
  • Using 2 medium-sized spoons, drop a few spoonfuls of the crab mixture at a time into the oil and fry until a nice golden brown color forms on the outside, 1 to 2 minutes.
  • Use a slotted spoon to transfer the beignets to a plate lined with paper towels. Repeat with the remaining batter, frying in batches so as not to crowd the pan.
  • You can keep the cooked beignets warm in a 200 F oven, if desired.
  • Serve with White Remoulade Sauce.
